vegetarian (or not) mediterranean stew – 20 mins prep time Posted bylisacaren February 19, 2012February 20, 2012 Leave a comment on vegetarian (or not) mediterranean stew – 20 mins prep time Whole Food Ingredients: 1 small eggplant chopped 1 large zucchini or 2 small chopped 1 red or green pepper seeded and chopped 3 large tomatoes chopped 2 cans garbanzo beans (14 oz) drained and rinsed 1 can artichoke hearts in water (14 oz) drained and quartered 1/4 tsp red pepper seeds 1 tbsp oregano 2 lb cleaned chicken breast cubed salt and pepper to taste kalamata olives as garnish approx 6 portions Quick and Easy Preparation: Add everything in crock pot Set crock pot on low heat for 7 – 8 hours.. Serve alone or on top of quinoa, rice or pasta.. garnish with olives if you like. NOTE: if you eliminate the chicken breast .. this is a vegetarian dish Create a great day !
