vegetarian (or not) mediterranean stew – 20 mins prep time

Whole Food Ingredients:
  • 1 small eggplant chopped
  • 1 large zucchini or 2 small chopped
  • 1 red or green pepper seeded and chopped
  • 3 large tomatoes chopped
  • 2 cans garbanzo beans  (14 oz) drained and rinsed
  • 1 can artichoke hearts in water (14 oz) drained and quartered
  • 1/4 tsp red pepper seeds
  • 1 tbsp oregano
  • 2 lb cleaned chicken breast  cubed
  • salt and pepper to taste
  • kalamata olives as garnish
approx 6 portions


Quick and Easy Preparation:
  • Add everything in crock pot
  • Set crock pot on low  heat for 7 – 8 hours..
Serve alone or on top of quinoa, rice or pasta.. garnish with olives if you like.
NOTE:   if  you eliminate the chicken breast .. this is a vegetarian dish
