No one will be the wiser with these yummo GF cookies…. they will just feel better after eating them…. NO big tummy bloat.
But just cause they are GF.. does not mean you can eat the whole batch.. ENJOY.
What you need:
- 3/4 cup butter, softened
- 1 1/4 cups packed brown sugar
- 1/4 cup white sugar
- 1 teaspoon gluten-free vanilla extract
- 1/4 cup egg substitute
- 2 1/4 cups gluten-free baking mix
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 12 ounces semisweet chocolate chips
NOTE: GF baking mix can be found at whole foods or any other natural food store.. and you can choose to buy all organic ingredient.. or not.. up to you.
How to.. its easy:
Preheat oven to 375 – Prepare a greased baking sheet.
In a medium bowl, mix softened butter and sugar, slowly add in egg substitute and vanilla while continue to mix. SLOWLY. add in gluten- free flour mix, baking soda, baking powder, and salt. Stir until blended…. once completely mixed .. stir in the chocolate chips by hand.
Using a tablespoon to measure a rounded scoop .. or if like me.. by hand.. drop cookies 2 inches apart on prepared sheet / flatten with fingers just a little .. Bake in preheated oven 10 mins until light brown… be sure to watch them.. Let cookies cool on baking sheet before removing.
