chicken, black beans and sweet potato stew – 15 minutes prep

Whole Food Ingredients:

  • 2 lbs  boneless chicken breast /trimmed/cubed
  • 1 medium sweet onion /chopped
  • 2tbsp olive oil
  • 4 cloves of garlic
  • 1 lb black dry beans
  • 2 lbs sweet potatoes/peeled and cubed2 tbsp chilly pepper
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 32 oz chicken broth
  • 3 bay leaves
  • Approx 6 portions

Quick and Easy Preparation:

  • Add all ingredients in crock pot except olive oil, onions and garlic
  • In sep pan, sautee onions with garlic until onions are translucent
  • Once onions are just translucent, add with garlic to the crockpot
  • Set Crockpot to High for 2 hours stirring  once or twice.. then lower heat to Med  for 6 hours or low for 8 to 9 hours.. Go to work, sleep or just hang out..  when you come back.. YUMMO.
