Matzah maddness… its Kugel

A Lighter version of the basic apple Kugel..

        Matzah (slice), 5 sheets  LOW Sodium /Thin Slice
        Granny smith apple – 3 medium  apples, cored , peeled and chopped
        Home Style Natural Unsweetened Apple Sauce, 1/3 cup
        Egg substitute, liquid (Egg Beaters), 9 tbsp
        Splenda or Stevia 12 tsp
        Lemon Juice  1/2 tsp
        Cinnamon, ground, to taste – for top

Crumble Matzah in large bowl and add water to cover.. soak for 2 mins and drain

Add all ingredients to drained / wet matzah bowl  do not dry off matzah

Add mixed ingredient to 8 X 8 Pyrex  sprinkle with cinnamon to taste  set and pre-heat oven to 350.. bake for 45 mins and top is brown  cool and cut.
