African (inspired) SPICY Lentil Soup …. with Peanut Butter, Brown Rice, and Lentils !
What you need:
1 medium yellow onion, chopped in small pieces
1/4 cup sliced green onion/scallion (just the green part)
2 bell peppers, seeds removed and chopped into 1/2 inch pieces – I used one red , one green
1 Tbsp minced garlic ( I used minced garlic from a jar )
2 14 oz. can diced tomatoes with juice
8 cups vegetable stock – I used low sodium
1 tsp. ground cumin
1 Tbsp chile powder
1 tsp. Cayenne Pepper.. recipe calls for Aleppo Pepper.. I could NOT find it.
(Use any combination of chile powders or spicy red pepper that you have if you don’t have Aleppo pepper .. like I did )
1/2 cup uncooked brown lentils – rinsed
1/4 cup uncooked brown rice
1 cup peanut butter – I used natural no sugar added
I used my favorite 5 Qt Crockpot for this.. but I think you could use 3.5 Qt for it too.
